2 easy family freezer meals

Easy family freezer meals have become a lifesaver for many time-poor, busy mothers. With so much to do every day, planning ahead with meals is one way to make your life a lot easier.

But what are freezer meals?

Well, one way of preparing freezer meals is by cooking a bigger batch of the healthy meal you’re preparing for dinner one night. Then package up the extra portions into containers and pop them in the freezer for another day!

This way, you have freezer ready meals available at your finger tips for the times when you need to give your family a healthy meal but do not have the time to cook it from scratch. Easy! No more last minute takeaways, trips through the drive through or need to grab an unhealthy option.

Looking for ideas for easy family freezer meals? Here are two of our favourites that could save you time and money.

2 Easy Family Freezer Meals

1) CHICKEN CORDON BLEU

Ingredients

  • Boneless Skinless Chicken (as many as you like – make more and freeze for later!)
  • Ham, thinly sliced (can be deli, prosciutto, or even just a yummy cooked ham)
  • Swiss Cheese
  • Ranch Dressing, your favorite (buy 2 bottles to make sure you have enough if doing a large batch)
  • Italian Bread Crumbs

Directions

  1. Flatten/tenderize the chicken breasts by laying it on parchment or wax paper on top of a cutting board. Then lay another piece of paper on top of the chicken and beat it to flatten.
  2. After you have tenderized to about ½ inch thick, put the Ranch dressing and bread crumbs into 2 separate dishes.
  3. Place Ham and Swiss cheese into the middle of the chicken.
  4. Roll up and tuck the two ends of the ½ inch chicken and place toothpicks to hold then together.
  5. Dip the chicken in the Ranch dressing and coat it well and roll on the bread crumbs.
  6. Set aside on a baking tray.

Now you can either cook it now by preheating the oven to 375 degrees for 45 minutes to an hour or at a later date by keeping it frozen.

2) BEEF STROGANOFF

Ingredients

  • Rice – any flavor you like!
  • 1 lb. tender cut Beef, such as Sirloin Tip
  • 1 to 2 cans Cream of Chicken Soup
  • 1/2 can of milk or 1 whole can milk if using 2 Cream of Chicken Soups
  • 1 Tbsp. Worcestershire Sauce
  • 1 Tbsp. Beef Bullion (the dry or refrigerated kind) any brand
  • Optional – Mushrooms (sauté`d)

Directions

  1. Cut beef into strips or bite size pieces and sauté until tender – only about 3 minutes.
  2. Pour in the cans of Cream of Chicken of soup.
  3. Stir and add Worcestershire Sauce and Beef Bullion.
  4. Simmer for about 10 minutes.
  5. Add the sautéed Mushrooms and cook until tender, about 5 minutes.
  6. Let it cool and then freeze it.

These two easy family freezer meals can be prepared in the quantities you want and kept frozen. Then you can simple reheat them when you want to serve a healthy meal to your family.
